The only questionable item in this is the taco seasoning mix, but I believe it adds up to zero points so I count it as core. Also, wasn't sure if I should post this here, or in the crockpot thread.
TACO SOUP 2LB core ground beef 1 medium onion, finely chopped 1 28oz can chopped tomatoes (I get crushed instead) 1 15oz can tomato sauce 1 cup water 1 15oz can whole kernel corn, drained 1 15oz can pinto beans (I get bush's, it doesnt have the glob of fat) 1 envelope of taco seasoning mix
Garnishes FF grated cheese FF sour cream Corn or Tortilla chips * optional, count points *
In a large skillet, brown beef and onion, drain. Add to crock pot. Add tomatoes, tomato sauce, water, beans, corn, and taco seasoning mix. For best flavor, cook all day on low setting. If using a dutch oven, bring to a boil and let simmer for 5 minutes.
I've always done the crock pot method, so not sure how good it'd be otherwise. Also, the original recipe calls for a can of chopped tomatoes, and says to puree them in a food processor before adding to crock pot. I just buy a can of crushed tomatoes. Saves time and is perfectly yummy. If you have less time, it also does well if you cook on high for about 4 hours.

I made this yesterday! I used crushed also, and added some kidney beans.

This recipe has been one of our faves for a while. I DO miss the chips, but it's still really good without them.

WOW this was really good!!
I had some left over taco meat from last night (with black beans) put that into the pot added 1 28oz can of crushed tomato added 1 cup of water and some frozen corn. very tasty
