Pollo Con Calabaza
Brown 1/2 onion chopped along with boneless skinless chicken thighs in olive oil. Once they are browned, add 3 or 4 fresh zucchinis, quartered and sliced, and 1 can whole kernel corn, drained. Season with garlic salt, pepper and ground cumin. Add about 1/2 cup broth, cover and simmer until chicken is done and veggies are tender. If you want it more like a soup, add more broth. Would be good served over cooked brown rice or even fried polenta.
