1 pound lean stew beef, cut in 1/2-inch cubes 1/2 cup chopped onion 2 ribs celery, chopped 2 medium carrots, diced 3/4 cup barley 1 bay leaf 6 cups beef broth 1 teaspoon salt, or to taste pepper, to taste
cook in crock pot 6-8 hours on low

I do this just about every Mon. We almost always have roast with veggies in the same pan for Sun dinner, and I just chop up all the leftovers, add some barley and whatever other veggies suit my fancy and let it simmer a few hours on the stove, and I get two dinners for the price/work of one.

This is what I'm making today! I add a little garlic to mine beause my family loves garlic. Basically I just throw everything into the crockpot and "forget about it".
Figure we're in for another wintry weather system in CT so we might as well have something warm and cozy for dinner.

I'm making the recipe from the turnaround cook book on page 30 right now. Can't wait for dinner to be served. I did substitute pork for the beef

Sorry~ for those of you that don't have the book~ Beef Mushroom & Barley Soup 1 pound boneless lean top round steak(cubed) 3/4 C pearl barley 7C water 3 Carrots chopped 2 onions chopped 3 celery stalks chopped 11/2 tsp salt 1/2 tsp fennel seeds 1/4tsp pepper 11/2C lima beans 11/2C sliced mushrooms 1. Combine the beef,barley & water.Bring to a boil and skim off any foam(a pressure cook my meat before I add it to the soup) Add the carrots,onions,celery,salt fennel seeds and pepper Return to a boil,reduce heat and simmer 45 min Stir in lima beans and mushrooms simmer 15 min yummy

Thank you so much, this recipe is great!!! My 18 year old son had some and said it tasted better than his favorite beef and barley soup sold at a local resturant. It is so much easier staying "on program" when the whole family eats the same. Thanks again!

I bought the Turnaround cookbook and tried this recipe last night. Had it tonight for supper and yuck. I found it really tasteless
