In a large stock pot: Saute until soft (5-7 minutes) 1 teaspoon of butter or margarine 1 large onion, chopped Add 1 large box of Campbell's chicken broth (or 6 cans) 2 large cans of stewed tomatoes 3 tablespoons of dried basil fresh cracked pepper (if you like it!) Cook for 10 minutes on medium heat. Chop coarsely in a food processor and return to stove to simmer.
When I make this, I usually just do a large CAN of broth, and we've used crushed tomatoes, skipping the food processor step.
This soup is so yummy, especially this time of year!

I made this last night to have for lunches this week. But I strayed from my recipe above.
I added about half a box of barley and a pound of stew meat to the whole mix. Came out much thicker, fuller.
Enjoy!

This sounds delicious, and I love the idea of adding barley and using crushed tomatoes. I'm all about saving time. Thanks!

Very addictive. I now know I need to go and get some 1c. freezer containers or I will finish the big pot before I should

I think if it's only a teaspoon spread out through the whole recipe, it's probably 0 pts.
You could replace it with healthy oil or use ff margarine. Then it will be Core.
