Vegetarian Split Pea Soup
Original recipe yield: 10 or more servings. INGREDIENTS: 1 tablespoon oil 1 onion, chopped 3 cloves garlic, minced 2 cups dried split peas 1/2 cup barley 1 1/2 teaspoons salt 10 cups water vegetable or chicken boullion to taste (somewhere between 5 and 10 cubes) (Or substitute canned veggie broth for water) 3 carrots, chopped 3 stalks celery, chopped 1/2 cup chopped parsley 1/2 teaspoon dried basil 1/2 teaspoon dried thyme 1/2 teaspoon ground black pepper

DIRECTIONS: In a large pot over medium high heat, saute the oil, onion and garlic for 5 minutes, or until onions are translucent. Add the peas, barley, salt and water and boullion. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally. Add the carrots, celery, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.
Add boullion if needed for flavor and more water if needed if the soup gets too thick. This soup freezes well - may need to add some more water when reheated.

OMG I made this soup tonight and it is delicious!!! I think I found a new favorite. I just halved the recipe, now I'm sorry I didn't make the whole thing.

I made Split Pea Soup the other day and I added 1 tsp of curry powder to it, it is so good!

I made this recipe Sunday and I love it! My husband loved it too, although he said he thought it needed some ham. Men! Thanks for the recipe!

It's funny you say that about ham. I thought about modifying it a little and putting in some canadian bacon on the request of my in-laws. If I do, I'll let you all know how it turns out.

this sounds delicious! ;D will make this next time I make split pea soup. I have been making split pea soup every two weeks and use canadian bacon(boars head is the best) and it is delicious. ;D DH likes it much better with can bacon than with a ham bone. about adding barley. how does that affect the soup taste? I never thought about adding barley to this soup. TIA

I don't think the barley really affected the taste, but it made the soup nice and thick. I've never had pea soup with barley, but I really liked it.
I may try adding the Canadian bacon next time to make DH happy. It's funny how pea soup has become a staple for me since starting Core. On Flex it was just too many points.
