You know how in the seafood section of your supermarket they always have stuffed flounder with crabmeat, well my DBF always buys it. I said last week, hey I bet I can make that and it will be just as tasty if not more so, who knows the exact ingredients the store puts in? So here goes, I made it up but it was delicious! We had it last night for dinner w/baked potatoes and baby carrots.
Serves 2
1/2 lb. any thin white fish like flounder, dover sole, turbot, tilapia 6 oz. can of crabmeat, drained 2 tsp. Old Bay seasoning 1 tsp. paprika 3 Tablespoons chopped onion or a couple shakes dried onion or onion powder 6-7 mini shredded wheat cereal pieces, crushed 2 Tablespoons light or ff mayonnaise
Pre-heat oven to 350 degrees. Wash fish fillets, pat dry and place on a flat surface. Mix all other ingredients in a bowl to combine. Spread in equal amounts on top of both fish fillets. Starting at one end of fillet roll up fish jelly roll style. Sprinkle fish with paprika.
Place fish rolls end side down in a pan sprayed with cooking spray. Bake 25 minutes or until the fish flakes.
I turned off the oven and covered the fish with foil for the last 5 minutes as I finished preparing the rest of the meal.
