MEXICAN CASSEROLE
1 lb. ground beef 1 pkg. taco mix 2 cans stewed tomatoes 1 can corn 1 pkg. cornbread mix wpa 1 sm. can mushrooms 1 pkg. ff Mozzarella cheese (use as desired)
Brown meat and drain, stir in dry taco mix. Add mushrooms, tomatoes and corn. Bring to a soft boil. Pour into casserole dish. Top with cheese. Mix cornbread mix, pour on top of dish and bake at 400 degrees. Use time on cornbread package. Then serve. I made it without cheese and still good

How many servings is this suppose to make? I somehow had the number 4 in my head. I had unexpected company, so now there are 6 of us. So, I decided to double the recipe. It's in the oven now and appears to be enough to serve 12 people!!!! Well, I have 2 teenage boys. Let's hope they find it really tasty!!

It was yummy.....hubby ate 3 servings, youngest son ate 3 servings, oldest son doesn't like tomatoes or mushrooms, so he only ate the topping.
It actually made 20 good size servings! We'll be making it again (will NOT double!).
