This one is VERY easy, and very tasty! This recommendation brought to you by a good Polish girl. ;-)
Stuffed Cabbage Casserole
1lb. lean ground beef 1/2 cup instant brown rice 1 can tomato soup 1/4 cup water 4 cups cabbage or cole slaw mix 1 large onion, chopped 1 clove garlic, minced salt and pepper
Preheat the oven to 400 degrees.
Brown the ground beef. Drain. In a large boil, mix everything else into the meat. Pour into an ungreased casserole dish, cover and bake for 60 minutes.

YAY! I'm glad you liked it! I'll tell my fellow WW meeting member tonight it's a big hit -- she's the one who gave the recipe to me!
P.S. Wrong thread, but I saw you had a small gain this week -- oh well, we all have those weeks. Hang in there! (I'll probably be joining you over in the corner, actually -- I too have not been making the best choices this week. But I've been exercising like a fiend, so hopefully the damage won't be too bad. We'll see tonight!)

Sounds wonderful!! I'm a good Russian (American) girl and I love my mother's halupki! It's hard to wrap up those cabbage leaves though, this is a great idea! I'm going to try it, thanks!

I made a variation of this tonight, and it was amazingly good.
Unstuffed Cabbage Casserole 1 pound extra lean ground beef or turkey 2 medium onions, chopped 6 cloves garlic, minced 1 tsp salt 1/2 tsp pepper 16 oz. tomato sauce 1 cup water 1/2 cup uncooked brown rice 1 bag cole slaw mix, or 1/2 head cabbage and 1 large carrot, shredded
Brown meat and drain if necessary. Add onions, garlic, salt, pepper, tomato sauce, water, and rice. Bring to a simmer and cook 10-15 minutes (rice will be partially cooked).
Spray a 9 x 13 pan with cooking spray. Layer half the cole slaw mix in the bottom and top with half the meat mixture. Repeat layers. Do not stir. Cover tightly with a piece of foil and bake for 90 minutes.

I have made this many times, I cut everything in 1/2 and bake in a 8x8 pan. I'm the only one who will eat cooked cabbage so 1/2 recipe is just right for a good couple of meals. Great reheated for lunch at work.

Kristen - this recipe is incredible. I put a little cinnamon in it cuz I love that in my cabbage rolls. Excellent - this will be a regular for me!! )
