Tuna Patties
1 can tuna, packed in water 1/2 onion, chopped 1 large potato, baked 1 egg salt and pepper cornmeal
Drain tuna. Remove the skin from the potato and break it up with a fork. Mix tuna with onion, egg and potato. Add a little salt and pepper. Shape into medium sized patties. Pour corn meal into a dish and roll patties in corn meal Saute in olive oil until golden.
(I also mixed a little cornmeal in the pattie as well as some cayenne pepper for a kick) I doubled the recipe and got 3 nice sized patties.

OH....this sounds interesting! I will have to try it. Do you just eat them plain? Or with some sort of sauce?

I made these for lunch. Very good!! Just had them plain.
A suggestion: Serve over salad greens with a scoop of Mexican Fiesta Salad on the side. Sounds good to me.
Another suggestion: Serve with sliced fresh tomatoes & red onion, drizzle a little lemon juice and olive oil on top.
Idea?: Substitute tuna with crab. Add some finely chopped celery and a little old bay. Now you have crab cakes!!!
