I just posted this over on the WW Core board, and thought I'd put it over here, if only to remind myself of it the next time I'm scanning for dinner ideas.
My mom used to make taco casserole when we were growing up; she'd just layer all our fave taco toppings in a dish and we'd scoop it into tortillas. I just had some a couple weeks ago but had to use some WPAs, and I thought, "How can I make this Core?"
Well, here ya go: Thin (1/4") slices of polenta fried in some canola oil, topped with Core taco-seasoned 95% ground beef, ff refried beans, and cheddar (using a couple WPAs for 2%); baked in the toaster oven at 350 for about 10-15 minutes to melt the cheese, then topped further with salsa, ff sour cream, shredded lettuce, and black olives.
Now, I have never liked polenta, but it was really good in this! I browned the beef and sprinkled it with chili powder, some onion and garlic powder, then added an undrained can of diced tomatoes, covered and simmered for about 10 min. You can use the ones with chilies in them if you want, and you can drain it if you want, too. I used the juices to flavor the polenta a little more.
I also used the log of pre-made polenta so I could make a single serving, but you could easily line a whole baking dish with it and bake it in the oven to feed the whole family.
