SHRIMP CURRY--COREBrown slightly:1 sm. onion, cubed 1 med. zuchini, split & sliced in 4 tsp. olive oil Stir in & heat:1 lg. clove garlic, cut up 1 Tbsp. curry powder 1 green apple, peeled & cubed Then stir in & heat:1 c. cooked brown rice 1 c. black beans, drained & rinsed Then stir in & heat:1 c. frozen sm. shrimp (Makes 2 servings.) Note: This was so good. I bought a really fresh curry from the natural foods store. I think it would be good with red peppers too, but I didn't have any. Don't overcook the vegetables & apple...you want it a little crunchy.
