This is the recipe e-mailed from my leader for the week. I haven't tried it, but it sounds good.
1 lb. extra lean ground beef 1 med. onion- chopped 1 envelope taco seasoning mix 1 can chopped green chilies 1/2 c. reduced fat Bisquick 1 c. skim milk 2 eggs 2/3 c. FF cheddar cheese- shredded Salsa and FF sour cream, if desired Spray pie plate with Pam. Preheat oven to 400. Cook onion and beef together. Stir in taco mix. Spread into pie plate. Top with chilies. Stir Bisquick, milk and eggs until blended. Pour into pie plate. Bake for 25 minutes. Sprinkle with cheese. Bake 2-3 more minutes until cheese is melted. Let stand 5 minutes before serving. Serve with optional salsa and sour cream. Serves: 6 CORE + 1 WPA (for Bisquick and taco seasoning) Flex: 5 points (Flex plan points do not count optional ingredients.)

This is so delicious!! I made it today and had some for lunch. I put the rest of the servings in those little gladware dishes you get at the grocery store and now have 5 more quick grab and go meals. Thank you for posting this recipe!!

I made this for dinner tonight and topped it with some avocado. Very yummy! We're having leftovers tomorrow night. Thanks for sharing!

I made this for dinner today. It was delicious. The teenager ate half of it though. I had to hide the other half for another time.

What was the consistency of the taco pie when you made it? I tried it tonight and I think that I may have done something wrong -- hard to believe, I know Was yours a bit mushy like a "eggy" quiche, or was it supposed to be firm? Mine was a little bit soggy - kind of like an undercooked quiche . . . I tried cooking it longer, but that didn't seem to help. There is no way that it was really undercooked - I think that I cooked it a total of 40 minutes when it was all told . . . ! Thoughts?!
