Bhindi Curry - Okra Curry style : Indian
I like Okra...so I really liked this recipe. It calls for 3 TBS of oil...I might cut that down a bit...or count the extra points. Ingredients:
1 lb. okra 1 tomato, diced 2 onions, diced 4 green chilies, chopped 1/4 Tsp. turmeric powder 1/3 Tsp. cumin powder 1/2 Tbsp. garam masala 2 Tbsp. lemon juice 3 bunch of cilantro or coriander leaves 3 Tbsp. oil Salt to taste
Cut off ends of okra, then cut okra into 1” pieces. Heat oil in pan on medium heat, then lower heat. Add onions, green chilies, spices and salt. Increase heat to medium. Stir-fry until onions are light golden brown. Add okra and stir-fry for 10-15 mins. in medium heat. Add tomatoes, sprinkle lemon juice and mix well. Sprinkle cilantro or coriander leaves for decoration. Serve with rice or maybe even couscous.

Wow! There really is a way to have okra without battering and frying in tons of grease! Thanks for sharing! I've been craving it--I'll have to try it.

We had this at a local Indian restaurant recently, and I told DH how good it was! Looked all over for a recipe for it, with no luck. THANK YOU SO MUCH!!! We will be trying this one for sure! (I don't usually like okra, but this was so good, I could become a convert!)

This sounds so good. I'm ready to branch out with CORE. I'll have to find out what is "garam masala".

I'm sure it will work with less oil. Does it really call for three bunches of cilantro? That's like 6 cups of the stuff.
