Greek Lemon Chicken, 4 servings (Light Cooking)
1 chicken (2 -4 pounds), quartered 1/2 cup lemon juice (about 2 lemons) 2 tblsp. olive oil 1 medium onion, sliced into thin rings 2 tblsp. chopped fresh oregano, or 2 tsp. dried 2 tsp. chopped fresh thyme, or 1/2 tsp. dried 1/4 tsp. ground black pepper Ground red pepper to taste (optional)
Remove skin from chicken, if desired. In large shallow dish, combine all remaining ingredients. Add chicken, and marinate in refrigerator at least 30 minutes. Preheat broiler, and place chicken on broiler pan. Broil, 4 inches from heat, 30 to 35 minutes until cooked through, turning and basting with marinade 3 to 4 times during cooking. Add onion slices from marinade during last 10 minutes of broiling. Serve chicken with onion slices. *May also be cooked on grill, 6-8 inches over hot ash-covered coals.
I made this with all white meat whole chicken pieces. Since I had about 5 1/2 pounds of chicken, I doubled all of the ingredients *except* the oil and the onions. I did not use the ground red pepper. I marinated for about 2 hours, and would probably do longer next time. I broiled on the middle rack of my oven for 40 minutes (with broiler on high), and turned and basted every 10 minutes. It was really good!
Calories: 269, Fat 8 g, Cholesterol 68 mg, Sodium 33 mg (I'm fairly certain these numbers are *with* the skin)

I made this and added black olives. I baked it in the oven with the marinade. This was SO EXCELLENT!
