Got this off the back of a box of a Kraft 10 min. brown rice. Tried it last night, very yummy!!!
** 4 small boneless chicekn breast halves (about 1 lb.- we used 2 breasts, and sliced them in half) ** 1 can chicken broth ** 1 cup sliced fresh mushrooms ** 1 small onion, chopped ** 1 cup frozen peas
1. Heat 1 tbsp oil in large nonstick skillet on medium-high heat. Add chicekn, cover. Cook 4 minutes on each side or until chicken is cooked through. Remove chicken from skillet, cover to keep warm. 2. Add chicken brothe and 1/2 cup water to skillet, bring to boil. 3. Stir in rice, mushrooms, onion and peas. Top with chicken, cover. Reduce heat to medium-low, cook 5 minutes. Remove from heat, let stand 5 minutes.
This makes 4 servings and was very good!

How much rice do you use and is it instant brown rice?

sorry it took me a little while to see this response! yes, we used instant (i always have trouble timing the non-instant brown rice correctly) and you use 2 cups (i think). It makes 4 servings of rice in the end.

I made this tonight, minus the chicken, as a side dish. Yummy! I did use 2 cups of rice.
