Here's another version, with only WPA's for breadcrumbs. I got this off the WPA board, and I wish I knew who to thank because it was AMAZING! This is going to become a regular meal in my house, no question!
Crab cakes
Ingredients: 3 cans crab meat (I used 1 lb. of the real thing, it was worth every penny) 1 egg or 1/4 cup Egg Beaters 2 T. ff mayo 1 T. mustard (any kind) 1 T. Worchestershire sauce 1/2 cup cornmeal or breadcrumbs (I used breadcrumbs and counted the WPAs) 1/2 tsp dry mustard 1/2 tsp Old Bay 1/2 tsp onion powder or dried minced onions
Mix it all up, make 6 patties and refrigerate for 1/2 hour.
Brown (use spray or oil allotment as you see fit) until golden on each side (about 4-5 minutes per side).

Thanks so much for sharing this recipe!
I went to Trader Joe's last weekend and bought a 1lb. can of claw crab meat for $8.99 and decided that I wanted to use it to make crab cakes. I searched for and found several different CORE crab cake recipes. In the end, I chose yours because I had all the ingredients in the house.
Wow! They were AMAZING!!! Everyone was a little upset at dinner because I only made 6 of them. They were all looking for more!
I will definitely be using this recipe for years to come!

Is there a substitute for the ff mayo? I don't eat mayo and my husband will only eat the real stuff (and only Kraft). I'd hate to buy an entire jar just for 2 T. Thanks!

Do you have a friend who has some in her refrigerator? If so, ask her if you can have a couple of tablespoons full. I would do just that. I wouldn't purchase just for 2 spoonsfulls.

These are good, and you can throw them together in a jif. I used cornmeal for the all-Core version.

These were terrific! I used half bread crumbs (counted the WPAs) and half corn meal. Served them on mixed baby greens with some couscous, and my DS, who is usually pretty non-committal, RAVED about these. This recipe is definitely a keeper. Thanks so much for sharing it!!!

Tina, I like to use FF greek yogurt, FF sour cream, a little FF ranch dressing and extra garlic or onion powder in place of FF mayo or FF miracle whip. Depending on the recipe and what's in my fridge. Works for tuna salad, dips as well as crab cakes! (I hope you'll check back as I'm posting late here!) ;D
