This evening I mixed 2 duck eggs in a bowl then fried them in a nonstick bowl sprayed with Pam (had used oil for the day) Then I mashed half an avocado with some salsa and a bit of yogurt cheese as the filling of the omelet. It was quite tasty and filling You could probably chop the avocado instead of mashing it and have it in the omelet with the yogurt cheese (or nonfat sour cream) on top with salsa on top, too.

Question: Do duck eggs taste different than chicken eggs? If so, how do they vary?

Duck eggs have a slightly larger yolk and seem a bit richer for some reason. Their shell (not eaten) is thicker with a thicker membrane around the inside. They are about the size of a very large chicken egg. I have only had ducks for about a year and a female duck, thus duck eggs, since this spring. I am still deciding what the difference really is
