My recipes sometimes come with a story.
DH was in the pantry looking for something and came upon a can of crabmeat and said, "Oh, honey, can you make lunch now, I'm hungry". I saw the can of crabmeat and knew he wanted crabcakes. "I'll come up with something but it won't be my old recipe because I don't want to use any bread today."
1 can crabmeat, drained well couple of turns fresh ground black pepper sprinkle salt sprinkle dry mustard sprinkle onion powder sprinkle parsley flakes 2 scoops fat-free mayonaisse (I used a regular tablespoon) to get everything to stick together
As the nonstick skillet was heating up on medium-high, I divided the mixture into quarters and then using my hands made 4 patties. I drizzled a teaspoon of olive oil over the patties and then careful placed the oiled side down in the pan and left them for like 5-plus minutes until I started seeing a little browning on the edges. I drizzled another teaspoon of olive oil over the patties and careful turned them over. All went rather well except for one that kind of rolled into a cylinder. Again, I looked for some browning on the edges and voila, lunch for two with a tossed salad and canned pineapple.
DH said, "These are really good but this is all I get, right?" Poor guy!
