This is more a suggestion than a recipe. I find that I am much more likely to eat a salad for lunch when I'm working at home or on weekends if all I have to do is plunk everything into my plate and drizzle some dressing on top -- no chopping or washing or tossing, or else it seems like too much work. So I've started to keep a few things in the fridge that make for really easy, filling, satisfying, lunchtime salad fixings:
Roasted red peppers Canned artichoke hearts Chick peas Pre-washed salad mix (my supermarket has an escarole blend that I LOVE) Rotisserie chicken Grilled eggplant strips
I basically plunk down some salad mix in a plate, top with the skinless chicken, peppers, artichoke hearts, etc., and drizzle with 1 tsp olive oil and 1 tsp balsamic vinegar, salt and pepper.
Obviously, the possibilities are endless.
