Mine do, during the week I normally have salad and or a baked potato. On the weekend I eat a more substantial lunch with DH.
What do you do?

Yes...definitely! On the weekend I can get creative and use whatever I can find here to make an omlet with egg beaters or some type of polenta thingy. For instance today I used 1 tsp of olive oil and fried up 2 slices of polenta and a few garbanzo beans :-[after sprinkling both with garlic powder. After everything was browned or crisped up, I melted some soy cheese on the top and spread it with guacamole and salsa. Yum!!

I like to save my rice/potato/pasta for my dinner meal so normally lunch is protein (meat/egg) & a salad w/the works thrown in (all sorts of veges + some sort of legume, ff croutons (wpa) ) w/olive oil & red wine vinegar dressing. Adding a little Splenda to the dressing cuts the bite & gives it a great flavor. Another lunchtime fav is core chili. If I'm not real hungry for lunch I'll just pop a bag of popcorn & munch away; very filling especially when you add a big glass of water:)

Guess I'm the odd woman out. I typically eat very similar lunches everyday. Usually it's some form of vegetable (soup, steamed, roasted) and fruit. Lately I've been relying on the salad bar at the cafeteria during the week, but I really have to start taking something warm. I shiver too much after lunch...

My lunches don't really change from week day to weekend, but my breakfast certainly does since I actually have time to cook on the weekends as opposed to having just cold cereal or oatmeal when I have to work. patti

Mine do! Usually during hte week its leftovers or soemtimes I cook for the week on the weekends. A weekend lunch is usually breakfast since I get to sleep late! More of a brunch

I agree with Pattinic!
My breakfasts change also from cereals during the week to casseroles, eggs and Canadian bacon and polenta wedges, etc.
My lunches usually stay the same.
My dinners change, somewhat, also where I'll make a roast on the weekends or a pan of lasagna, etc. instead of just something out of the crockpot or simple, quick meals.
