After having been on flex for so long, I am used to LF cheese. Does FF cheese melt well? Thanks for your answer.

I don't think so. I've heard that soy cheese melts better. It's pretty good when used in foods, but I haven't found any I like to eat by itself (that's a good thing).

Thanks for your speedy reply, Tina -- I have learned a lot from your posts. I am going to cross out "FF cheese" on my Trader Joe's shopping list and sub "soy cheese."

I use the FF Kraft cheese. To melt a slice like on a burger, I add a small bit of water into the skillet and put on a lid and the slice melts beautifully. I also use the FF Cheddar shreds in corn bread and it does great. When melting the FF Mozerella shreds like on a Pita Pizza I give it a quick spray with PAM Olive oil and it melts and browns great. I read that spraying the FF cheese helps it melt and I have had good success with it. I can't just eat it plain though. I have to occasionally count points for the real thing. Oh I also melt the cheddar shreds in omelets and spray it too.

Thanks, cydkitty -- that sounds like good advice. I've added that to my notes.

I use the soy cheese in food and real cheese and count the pts when it's by itself - the other night I had soy cheese on top of boca burgers (aren't they core) with homemade salsa in the microwave. MMMMMM.
