And I don't mean the Turnaround Cookbook!
I just got out the Versatile Vegetarian WW cookbook (copyright 2001). I'm not kidding that 90% or more of the recipes are either 100% Core, or they have just 1 ingt that's not Core (and can be omitted, substituted or just count WPA for that ingt). Beautiful! And if you're not vegetarian, you could figure out how to add meat to the recipes if you must!
I got my copy on eBay. I'd have to say it's a great resource for us Core folks. Check it out!

Today was my weigh in and I bought the WW book down to earth, copyright 2001 and it has more than 130 Vegetarian Recipes and most can easily be adapted to CORE. Tonight I had the Linguine w/Fresh Tomato Sauce and it really was yummy. I just used ww linguine and ff feta cheese instead of regular, now I have enough to have for lunch tomorrow. I bet this will be even better when fresh tomatoes are in season. If anyone wants the recipe I will add it.
Thanks for the idea in buying a vegetarian book. There are a lot of recipes I will try.

That cookbook is fabulous! Try the eggplant parm. I substitute zucchini for eggplant and it is out of this world!

I just got the "Vegetarian Times Low-Fat and Fast" recipe book and it is fabulous! 90% of it is Core and the other 10% easily adaptable. For example, I would use low-fat tofu instead of the regular tofu a recipe might call for. I made the Greek Bulgar and Spinach Skillet meal and it was all I could do to keep my DH from finishing it off! (Criminy, leave me something for lunch tomorrow! haha.) A seriously great resource.

I love Versatile Vegetarian! Mine falls open to the page with Curried Cauliflower and Black Bean Stew on it. I make it at least once per month. Leftovers are even better.
