Ok, so I don't ever make anything for one meal at a time... except maybe veggie burgers but here are some things that I do to keep myself going and staying on core: Buy in Bulk: I still shop at CostCo. If I see something I want in a big package (like chicken, fish, meat, ect) I bring it home and wrap 2 servings in palstic wrap, twice. Then I freeze it between 2 cookie sheets in 1 layer. This helps to freeze it faster and in a stackable shape. Cook for 4 (or 5 or 6...): I make 2 or 3 large recipes on the weekends and then store them in individual portions. I reall luke the gladware for this, but you can also find some good stuff at the $1 store. My favorite containers came from there and have proven to be very durrible. I keep a portion or two of each in the frig and the rest in the freezer. This way I always have a variety of things to choose from. I always, always pack my lunch (and breakfast) before I go to bed, so I am prepared for the next day. Make breakfast in batches too: I also do a big batch of soemthing for breakfast once a week... oatmeal, polenta, grains in the crock pot. I they and be sure that what ever I make includes at least one serving of fruit or veggies per portion, then I only need 4 more. Of course, I've been known to eat 10 or 12 f & v servings in a day too That's all I can think of right now, but I'll post more later.
