Ingredients: 1/4 cup chopped onion 1/4 bell pepper 1 clove garlic 1/3 tbsp. olive oil 1/4 tsp. dried parsley 1/3 cup FF chicken broth 2 tbsp. canned black beans, rinsed and drained 1/4 tsp. oregano 1/4 tsp. cumin Directions: Finely dice onion and pepper; mince garlic.
In small soup pot, heat olive oil to medium high heat. Add onion, pepper, garlic and parsley and sauté for 2-3 minutes until onions are translucent. Add broth, black beans, oregano and cumin; bring to a boil and then lower heat to a simmer and cook for about 8 to 10 minutes. Serve.
I usually double or triple the recipe. And you can add a dollop of ff sour cream when you serve or ff yogurt mmmm
