Ingredients: 1/2 cup green soybeans (edamame) 6 cherry tomatoes 1 1/2 tbsp. of salad dressing, nonfat 2 cups lettuce, romaine or lettuce of choice Directions: Cook shelled or frozen soy beans in boiling water for 5 to 7 minutes until tender, but still firm; drain and let cool.
Rinse and cut tomatoes in half.
Combined soy beans and cut tomatoes with dressing until well mixed. Serve over lettuce
