I eat this quite often and it tastes yum-may! 2 eggs 2-3 slices of polenta Pretty easy. Just cook the eggs in olive or canola oil or Pam. Then "fry" the slices of polenta in the same pan. I like to add Tapatio hot sauce on my eggs and then dip the polenta in the egg yolk. Either this is really good or I'm just weird...

What a great idea! Polenta takes the place of a tortilla. My favorite breakfast is an egg, over easy on a soft corn tortilla topped with salsa and a side of refried beans. This way I can have it totally Core.

Thanks for that idea...I love it. I was eating an egg in the morning, but felt like I was missing something. The polenta replaces my toast....I am new to polenta and a lot of whole grains, so I never think to do things like that!

This is brilliant! I've been learning to poach, so I put my poached eggs on top of the fried polenta. I use cayenne pepper and garlic powder to give the polenta a little kick.
