TEXT Easy Chicken & Spaghetti TEXT 1 serving boneless skinless chicken breast 1/4 onion, sliced 1/2 small bell pepper, sliced 4 button mushrooms, quartered 1 small clove garlic, crushed 1/2 tsp. Italian seasoning 2 tsp. olive oil 1 serving whole wheat pasta 1 8oz. can tomato sauce Salt & Pepper to taste In a med saute pan, spray Pam and add olive oil. Saute veggies until tender. Add chicken breast. ( I take it straight from the freezer, no defrosting necessary). Brown slightly on each side, then add tomato sauce and spices. Cover & simmer for 15 to 20 minutes, until chicken is done. Meanwhile, drop pasta into boiling water and let cook for about 8 minutes or until "al dente". Drain and add to Chicken and Veggies. You can top with 1 tbsp. grated parmesan for 1 WPA.

The Herb Potato, Easy Chicken & Spaghetti and Balsamic Chicken sound delish!!!! Thanks for posting-----it's nice to just have the one portion and not have to reduce a recipe or freeze left-overs. Thanks again!
