if I make my own chicken soup/stock from scratch, refrigerate it and spoon off the fat, would it be considered core? TIA
also, I know that no sausage is core, but will ask this anyway. I like to make my own sausage or ground meats. I would use lean cuts of meat as allowed on core. if I grind, season and stuff into casings or not, do you think it would be core? TIA

I'd say absolutely to the chicken soup/stock. I love homemade stock -- it's so much more flavorful then the canned broth.
And if you don't shove the sausage into the casings, and don't use sugar in the seasonings (a lot of sausage has this included), the I'd say Core for the sausage as well.

I think the WW site has a recipe for Core summer sausage made with extra lean ground beef. Don't know if that is what you're looking for, but the recipe looked interesting.

thanks for your input. I posted the summer susage made with extra lean beef. DD made it with 90%. mine made with 94% was so much better. I added extra spices and drops of spiced oils.

Ah! You're talking about summer sausage! In that case, as you're not eating the casing itself, it wouldn't matter. And yes, I'd say it's definitely Core.

Yeah, I think the reason behind the 'no sausage' rule is because most sausages (even the soy kind) have a lot of added fats that make them unhealthy. I would think that, if you controlled what went into them, it wouldn't be a problem. The only other thing I could see would be energy density - not sure what exactly is involved in making sausage, but if somehow the meat shrinks up or something in the process, so the end result is that 1# of fresh meat gives just 1 serving of sausage, say, then that would be a no-no. But, if that didn't happen, then I say go for it (and share the recipe, too! )
