Does anyone know what desserts/snacks that can be done with FF ricotta cheese? I love the stuff and have run out of anything orginal to do with it. Any tips would be much appreciated! TY in advance!!

Jennie- I've never made anything for dessert with ricotta, but I did a quick search for recipes at www.kraftfoods.com and found the following (I've edited to make core-friendly): Italian Cream Pudding 1 envelope unflavored Gelatin 1-1/2 cups fat free half-and-half, divided 1/2 cup granular no calorie sweetener 1/2 tsp. vanilla 2 cups fat-free ricotta strawberries (or other fruit) for garnish SPRINKLE gelatin over 1/2 cup of the cream in medium saucepan. Let stand 5 minutes to soften. Stir in remaining 1 cup cream, granular sweetener and vanilla. Cook on low heat until gelatine is completely dissolved, stirring frequently. ( Do not boil.) POUR cream mixture into blender or food processor container. Add ricotta cheese; cover. Blend until pureed. Pour evenly into 8 (6-oz.) custard cups or souffle dishes. Refrigerate 2 hours or until set. Top with fruit. ------------ Ok, not as many as I'd thought, but that may be a good start!

When I was originally looking into Core, I found a recipe that used FF Ricotta as a whip cream replacement. I made it once, and it was delicious. It was basically just sweetened Ricotta (using Splenda or Equal, some cinnamon and some nutmeg) that was then run through a food processor until creamy and "whipped". Serve it over warmed fruit (like baked apples or pears) or with fresh berries. Delicious!

Just a reminder, BlondieKate, if you are following the Core Plan to the letter, fat-free half-n-half is not Core.

1 cup of frozen raspberries, 1 envelope of Equal, 1/2 cup of ricotta, and a splash of vanilla extract in a blender or small food processor. You will think you are eating ice cream.
Same as above but instead of raspberries, 1 teaspoon unsweetened cocoa powder. You may want to add another envelope of sweetener. Eat alone or with fruit. I eat it with barely thawed frozen cherries.
