"C'mon America, Let's Eat!" by Susan Powter is extremely Core-friendly. Quite a few recipes are entirely Core (41 recipes by my count), and others are very easily made Core with simple modification.( 23 recipes easily modified) This cookbook was published in 1996.

WW has a great book: The Turn Around Cookbook. You can only get it at WW.

Would this be a good cookbook to get for someone who is new to cooking all these grains, beans and lentils? I've never cooked with these things, besides ww rice, and even with all these awesome recipes on this board, I don't know where to start....help!! Thanks JoSt

Thanks JoSt JoSt - I'm not familiar with the Susan Powter or WW books, but try Jane Brody's Good Food Book or Vegetarian Times Complete Cookbook. Both have basic descriptions and cooking instructions for grains and legumes as well as soy products. Jane Brody's book has information about fruits and vegetables, too.

Mark Bittman's How to Cook Everything is terrific. For most recipes, you just need to cut the amount of fat he calls for.

Another good one is Leanne Ely's Saving Dinner - it's very core friendly, and busy, working mom friendly, too. I just got it so haven't tried anything in it yet, but it looks great! And, she has shopping lists built in (you can print them out on her website ,too - www.menumailer.net/saving_dinner_cook_book/saving_dinner_grocery_lists.html) so you have your week's shopping put together for you.

On Leanne's web site ( www.savingdinner.com) you can also sign up for her Menu Mailer; she E-mails you a week's worth of menus and a grocery list every week. There's a "low carb" version that is even more core-friendly than the regular one; just add grains or ww pasta where she adds serving suggestions for carb eaters in the family. Like the book, it's all healthy, wholesome, and quick. It's really a great service and not expensive -- $9.95 for three months, less per month if you sign up longer.

I've been doing the regular menu-mailer for a couple of months now. I don't make every meal, but the ones I have made have been very good. I usually cook the one for six - modify if necessary for core - and then we have great left-overs for lunches.
