I wanted to post this before I forget the recipe...
ingredients
1 lb beef tips (lean, 1/2 inch cubes) 1 1/2 cups dried beans ( I used great northern and black eyed peas) 1 cup onions 1 1/2 cups carrots 1/2 inch slices 2 cups sliced mushrooms 2 cups quartered new potatoes 1 15 oz can tomato sauce 4 cups water spices 2-3 Tbs dry red wine
Method turn cooker on low to pre-heat, should be at least 6 quarts, or reduce recipe
trim meat of visible fat, spray black iron skillet with olive oil and get very hot, brown meat on all sides, about 5 mins. add salt and black pepper.
make spice mix - parsley, bay leaves, garlic powder, thyme, salt and black pepper. I add a T of Braggs amino acids at the end of the cooking cycle.
Start to layer ingredients in crock 1- beans 2- onions 3- mushrooms 4- carrots 5- potatoes 6- meat 7- spice mix 8- tomato sauce 9- wine 10- water do not stir
cover and cook on low 6-8 hours. check beans for tenderness. serve with green salad, my kids like whole wheat egg noodles too.
