The family is coming to our house for Easter Brunch this year..... Does anyone have any suggestions for some crockpot brunch recipes?

how about the steel cut oatmeal? For a special occasion, put in some dried fruits and nuts. Recipe is one of the first on this page.

I'm not a huge fan of oatmeal....(other than the CORE oatmeal pancakes I eat every Sunday) but it might be nice to try it for the rest of the family!

I'm having a "fresh" ham dilemma!!

I'd love to make a ham for Easter but cannot seem to find one that's CORE. Everyone keeps saying get a "fresh" ham. You'll all have to excuse me but I've never bought a fresh and don't know where to get it. It seems the one's that are sold at Waldbaums and Shop-N-Stop (our local grocery stores) are already cooked and/or smoked. Does it have to be uncooked to be "fresh"?
Hope someone out there can help........

I was under the impression that 'lean' ham is core...I never heard the fresh. Is there such thing as 'fresh' ham?? I thought it was all smoked. (but maybe not all fully cooked)
As far as brunch, I'm going to throw together my own concoction of lean ham, red, yellow, and green peppers, onions, mushrooms...brown them up in a pan, add in a bunch of eggs mixed with a little milk, and throw in a casserole pan. I had a non-core recipe for something like that, and I'm going to skip the bread, cream of mushroom soup, to keep it core. Bake at 350 until center is cooked...I think it's usually about an hour for 15 eggs. I also plan on fresh cutup fruit, and might do muffins to keep the non-core people happier.

My mother-in-law makes fresh ham. It's pork leg - the same cut that's cured to make regular ham. www.foodsubs.com/MeatPorkLeg.htmlI don't eat much ham or pork, so I don't know what types are core. Sorry.

All hams are "cured," but most of them still need to be cooked for some length of time. Any ham that says "lean ham" on it (normally says 96% lean) is Core. It doesn't have to be fresh.

Thanks a bunch everybody! I'm going to the grocery store tonight to start my "hunt for ham"! LOL
I'll post the brand names of any lean hams I can find. Hopefully it will help others! Imagine all this back and forth posting over a piece of pig's rump!!! LOL

love2lose: You are talking about brunch. Right? I used to make an Easter brunch when my girls were first married. When the would spend holidays with inlaws I would prepare early brunch. I would make egg casserole that you can prepare in the evening, containing bread, milk, eggs, cheese, canadian bacon. You probably know what I mean. I would serve fresh fruit with it. You could make this core friendly with soy cheese or ff. I like soy sation at trader joe's. Use low point bread cubes. I don't have exact ingredients for core friendly but I bet someone out there has.

Josh: Yes, I'm looking for something for brunch. I figured someone out there must have a CORE friendly ham and egg casserole type recipe for the crockpot. I'll have plenty of stuff in the oven and would love to be able to have something I could start in the crockpot in the morning and not have to think about again until company arrived later on in the day.

love2lose: That's a tough one, can't help there, but, you can find a fresh ham at Whole Foods. I saw an add in the food section today regarding fresh uncooked hams. Whole foods advertise no preservatives or junk in their fresh raw hams. If you don't have a Whole Foods, perhaps you have a store similar to that.
