I'm looking for some suggestions for breading fish or chicken with corn meal.

I just put some corn meal into a zip top bag and add my fish. After shaking the bag the fish is coated and I cook it in a fry pan with my daily oil, over med heat till done. Most times I add a couple tablespoons of water after I have flipped the fish and cover with a lid to finish cooking. Try a search for chicken recipes to see what you come up with. Good luck

I'm probably a little bit late on this, but here's my two sense.
I've made onion rings like this and they're really good. I season the cornmeal (and if you're really wanting a good breading, I'd use about half corn meal and about half ground oats--but be careful, some would say this isn't core if the oats are ground). Then I dip the onion rings into a beaten egg. Then I dip them into the cornmeal. When you bake them, they come out really crispy and good. And for onion rings, especially, I stack them a little on top of each other so they aren't sitting completely on the pan. This not only makes them easier to turn, but makes them taste better!

That onion ring idea sounds great! How long do you bake them, and at what temperature?

I just tried this fish recipe the other night and loved it.
CRISPY BAKED FISH
1 pound fish
*Milk Mixture* 1/4 cup milk 1/2 teaspoon vinegar 1 tablespoon brown mustard
*Breading* 1/2 cup cornmeal 1 teaspoon salt 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon paprika 1/2 teaspoon thyme 1/4 teaspoon pepper 1/4 teaspoon cayenne pepper
Mix milk, vinegar and mustard and let set for 15 minutes. This will make a mustardy, buttermilky dressing to coat the fish. In a separate bowl mix cornmeal with all the seasonings. Dip fish fillets in the milk mixture and then in the cornmeal mixture. Spray broiling pan with cooking spray. Place fillets on prepared pan and place pan under broiler 4 inches from heat. Broil for 4 minutes per side or until fish flakes easily with a fork. Makes 4 servings.

i use cornmeal to bread both chicken tenders and fish you will need a ziplock bag and 2 flat dishes (pie mans will do nicely) 1. season cormeal with s & p, paprika, garlic powder, etc (or to your taste) and pour mixture into ziplock 2. beat one or 2 eggs or 3 egg whites in one of hte flat dishes 3. pour seasoned whole wheat flour into the other dish 4. dip chicken tender in flour, then egg, then drop into zip lock and shake to coat. remove to a plate and repeat with all pieces. (count points for flour--about 1/4 pt per serving-you can omit the flour and just use egg and cornmeal if yoou wnat 5. if you have time, refridgerate the coated chick or fish for a bit to set the breading 6. bake or pan fry in healthy oil or in a non-stick pan (spray the chicken pieces with a bit of ht eoil if you like)
