I saw an episode on FoodTV about veggie sandwiches and adapted it. I don't care for veggies but if you grill them , they areally are pretty good.
All you do is slice, lengthwise, zucchini, yellow squash, and red onion. Then mix them with salt, pepper, and minced garlic and 1tsp of EVOO. I put them on a cookie sheet and grill them. Then, I layer a couple veggies with fat free ricotta in between. Something about the hot veggies and cool ricotta is divine.
