Black Bean Salad (Core) 4-6 servings
2 cans black beans 1 can corn kernels 1 1/2 cups celery, chopped 1 1/2 cups red onions, thinly sliced salsa cilantro 1/2 Tbsp lime juice 1 tsp red wine vinegar
Rinse and drain beans, and add drained corn. Add chopped veggies, and chopped cilantro, and just a bit of lime juice (maybe half a Tablespoon) and red wine vinegar (maybe 1 tsp). Toss with salsa.
