For a variation on the usual pilaf, here's what I did for lunch today (kids liked it):
1 c. uncooked quinoa 2 c. water 1/2 Tbsp extra virgin olive oil 1 large (or 1 1/2 small) zucchini 1/4 red bell pepper 1/4 yellow bell pepper 1 stalk celery seasoning to taste
Mince the veggies and saute the veggies in olive oil in a non-stick skillet. Meanwhile, place quinoa and water in large saucepan with snug fitting cover. Bring to a boil, lower heat and simmer covered for 10 - 15 min until water is absorbed and quinoa is tender/translucent. Add sauteed veggies (scraping skillet to transfer as much evoo as possible) and season to taste. I used Trader Joe's 21 Seasoning Salute and Penzey's Sandwich Sprinkle. Sauteeing the veggies gives them a very good taste when combined with the grain. Serves 4 - 6.
