This is so good. I use it all the time. And it's easy, especially if you live near a trader joe's
Prepare 1 cup of Quinoa according to package directions (I use chicken broth)
Add 1 can black beans (drained & rinsed) 1 can TJs sweet corn (drained) 1 can TJs fire roasted tomatoes (or any can mexican tomatoes you like)
Use Trader Joe's cilantro dressing (in refrigerated section...ALWAYS keep in fridge or the bottle will explode. I know from experience!) to taste--it's not core, but it's low fat and a serving is about 1 point (or you can use 1/2 serving for free...)
You could also make a lemon/avocado/cilantro dressing if you want. But I just use the bottled stuff.

Is that 1 cup of dry quinoa or 1 cup after you prepare it?

The instructions say, prepare one cup of quinoa as directed on package, I will assume it is dry. I like quinoa a lot. I will try this.

prepare one dry cup. so it makes enough for a family or a potluck dish. sorry to take so long to reply! Glad you're going to try it
