This was the sample at Trader Joe's today. Yummy! With just a couple of minor changes it's core too! I am posting as written by TJ's. If you want to try it, you can make the changes, or just count the points for the 2 (or 3 see my comment after the recipe) non core items.
Couscous Feta Salad
1 package TJ's Couscous, prepared (see comment below) 1 can TJ's Garbanzo Beans, rinsed and drained 1 cup sliced green onions, including tops (see comment) 1/2 container TJ's Crumbeled Feta Cheese 2 cans TJ's Sliced Ripe Black Olives, rinsed and drained 2/3 cup TJ's Italian Dressing Lettuce
Directions:
Cook couscous according to package directions, using only half of the seasoning packet. Fluff with fork. Add garbanzo beans, onions, cheese, and olives. Pour dressing over the mixture and toss lightly with fork. Serve on a bed o flettuce.
Serves 8
Comment: This is the recipe as handed out at the sample counter. However, they had the boxes of what they used, and they used slightly different ingredients. They did not use the flavored couscous, they used the plain stuff. They also used a red onion (I could see it, but it was not on the counter). They also did not serve it over lettuce. It was very good though, and I'll be making it w/ FF dressing, or homemade w/ a bit of oil for my daily serving, and counting points for the feta (I think it will be something like 6 points for the entire recipe).

How much couscous does the box make? How big is the Feta container?
