4 cups water, 1-1/2 teasp, salt, 1/8 teasp. pepper, 3/4 cup yellow cornmeal or polenta, (not quick cooking), 1/2 cup soy blend cheese, or favorite ff cheese, 2 tab. chopped fresh basil, 1 tab. butter (optional)
Bring water with salt and pepper to boil. Slowly add cornmeal in a slow stream, lower heat, cook for 10 to 15 minutes stirring, add cheese, basil and butter. Eat as is or top with sauted mushrooms.
When cooled, you can slice this, transfer to cookie sheet, brush with allowed oil and broil 4 inches from heat, without turning, until golden and browning in spots, 20 to 25 minutes. Top with chunky tomato sauce.
