Cooks Illustrated Brown Rice
1 1/2 cups brown rice 2 1/3 cups water 1/2 tsp salt (optional)
Heat oven to 375 degrees
Spray covered ovenproof casserole dish with cooking spray.
Add rice to the dish.
Boil water in covered pan to minimize evaporation. Add salt (if using).
Pour over rice in pan
Bake rice in covered pan for approximately 1 hour in 375 oven.
Fluff and let stand for 5 minutes.

Oh, you (or someone) posted this on the WW boards a few days ago. I meant to go back and let you know that I used this recipe, and it's sooooooo good! I was one of those that can make a perfect souffle and a million other things, but rice has always alluded me. This recipe worked wonders, though! It's great!
Whoever posted it the other day also added the following variation: ORANGE VINAIGRETTE BROWN RICE SALAD: Follow the foolproof recipe above. While the rice is in the oven, in a small bowl whisk together 2/3 cup orange juice; 2 tablespoons vegetable oil; 2 tablespoons balsamic vinegar; 2 tablespoons honey; 2 teaspoons orange zest; 1/2 teaspoon salt; 1-1/2 cups spinach leaves, packed; 2 large oranges, peeled and sectioned and cut into bite-size pieces; and 1/3 cup red onion. When you remove the rice from the oven, pour this dressing over the hot cooked rice and mix well. Cover and chill in the refrigerator until cold.
I haven't tried it yet (not really core with the juice and the honey), but it sounds great, too. I think i'm going to try it the next time I have people over, so I won't end up eating too much of the non-core things myself, but still get to try it out!

Thanks, Nikki. I cook brown rice like it is pasta, in a huge pot of salted water, and it works fine, but the pot gets filthy. This sounds easier.

I used this method and used french onion soup instead of water. Next time I'm going to use chicken broth and curry powder. Turned out great!

Sounds yummy, the most I've ever done is add broth to the rice instead of water. I do that with my whole wheat pasta too...

This is now my preferred method for making brown rice -- it works GREAT for basmati, especially! Thanks for the head's up -- I liked the recipe so much, I bought a Cook's Illustrated cookbook at Costco to see what other tricks they have up their sleeve.
