White Bean Hummus
2 cans white cannelini beans (drained) juice of two lemons one clove garlic - minced salt and pepper to taste
Put all in food processor and process until beans are chopped or to the consistency you like. Spoon into a bowl and add chopped roasted red peppers...stir gently to mix. Serve with sliced cucumbers, baby carrots, grape tomatoes, sliced red and green peppers.

;D Hippomommy I loved your recipe so much I had to add my own twist to bring one of my favorite flavors to the table....black olives...here is what I came up with, I hope you don't mind!
Black & White Bean Dip 2 cans white kidney beans, drained and rinsed 20 black olives 3 t. minced garlic (can you tell we LOVE garlic here?) 2 t. EVOO 1/2 t. lemon juice freshly ground black pepper 1 t. kosher salt
Put all ingredients in a food processor and process until the dip is well blended and creamy. Enjoy with any veggies you can imagine, or even in a pita (take the points). Sometimes I just nibble it by the spoonful! ;D
