Bean and Roasted Pepper Dip
1 teaspoon extra virgin olive oil 1 cup onion -- chopped 2 tablespoons fresh basil -- chopped 15 ounces pinto beans, canned 3/4 cup roasted red pepper -- thinly sliced
Heat olive oil in a medium nonstick skillet over medium heat. Add chopped onion, and saute 4 minutes or until tender. Add basil and pinto beans; cook over low heat 5 minutes, stirring frequently. Partially mash beans. Stir in bell pepper.
