![]() www.picrack.com/001/other(2)/Potato Skin.jpg[/IMG] Taco Potato Skins4 large baking potatoes, scrubbed, pierced, and baked for 1 hour at 400 salt and pepper, to taste Pam ½lb of ground turkey breast ½ packet of taco seasoning 1 small tomato, diced 1 small can sliced black olives bunch of green onions, sliced 4oz fat free cheddar cheese Avocado Ranch Sauce (mix the following together and chill while preparing the skins) 1 cup plain non fat yogurt 3tsp ranch dressing mix 3tsp taco seasoning 1 avocado, mashed While potatoes are baking, brown turkey and add taco seasoning. Quarter potatoes and scoop out half of the potato. Spray potatoes with Pam and season potato skins with salt and pepper. Fill potatoes with turkey and top with cheese. Put back in the oven for about 10 minutes. When cheese has “melted” top with tomato, olive and green onion. Serve with sauce. |

Didn't you take a picture of these too?
So good, I don't even like potatoes and I really liked them. The ranch sauce is the best too!

fab recipe...it was a total hit w/ my fellow ww'ers at work. it tasted so close to bar food even i couldn't believe it was core...and i made it!

I think I will make this for a fun Friday night dinner "treat." I absolutely love the potato skins for restaurant appetizers, but those pts are not worth it! Besides, I can make a meal out of this with a lovely salad and be totally CORE and much less expensive!!
Our favorite Taco Seasoning is Old Elpaso, FYI.
