Veggie Wrap Serves: 2
Ingredients 1/2 cup peeled and chopped cucumber 1/4 cup chopped red or green pepper 2 large pitted olives, chopped 1 large Italian Plum tomato, chopped 2 tbspn sliced green onion tops 1.4 cup reduced fat sour cream 1/2 tspn Italian Seasoning 2 small low point flour tortillas*use wpa
Directions In a small bowl combine the cucumber, pepper, olives, tomato and green onion. Stir to mix. Stir in the sour cream and the Italian Seasoning. Divide the filling evenly between the two flour tortillas; laying the mixture in a line down the center of each tortilla. Roll each tortilla around the filling and serve immediately.

I made this yesterday for lunch and thought it was great. I'll add some mock crab for a little protein when I make this to take for lunch today. It's a really nice change of pace from salads and soup.
