This is delicious and very, very filling:
In a microwave-safe bowl, layer:
1/2 can fat free refried beans Fat free mozzarella (shredded), to taste.
Microwave on high for 1 1/2 minutes or until cheese is melted.
Top with fat free sour cream and half an avocado, sliced. Season with salt and pepper.
Enjoy!

This is a really nice, simple, cheap and filling way to grab a fast meal. I've done this often when I've got 5 minutes before I dash off to the next thing. Keeps you going for a while.

Yum this is one of my faves too! I usually put some black olives, tomatoes, and onions in mine too and sometimes even lettuce if I want it more salad-y!
