Asparagus and Lemon Chicken with Rice 1 tb Olive oil 1 Chicken breasts without skin Salt Pepper 4 Cloves garlic cloves 1/2 Red pepper; seeded & trimmed 1/2 lb Asparagus spears; trimmed 1 ts Lemon zest 1/2 c Chicken stock 3 c Cooked brown rice
In a large non-stick skillet heat the oil over medium high heat. Season the chicken pieces with the salt and pepper and add to the skillet. Cook the chicken until golden brown, about 5 minutes. Stir in the garlic and red pepper. Add the asparagus and cook for 1 minute. Stir in the zest and 1/2 cup liquid and bring to a simmer. Cover and cook for 3 minutes. Serve immediately over hot rice.

I am a newbie cooker, so please bear with my question... Ok, so you have a bulb of garlic, and there are those little sections in side...are those the cloves? Someone told me that each thing of garlic is a clove and obviously that didnt clarify. I really dont mean to sound like an idiot!!! Thanks!!!

Yes, Jenn, when you break up a chunk of garlic, you get a bunch of individual chunks....each one is a clove. (I cheat and buy the diced jarred garlic, cuz I hated chopping garlic cloves, and I love alot of garlic.

Pookie, I have a garlic press, but what I hated was peeling all of it, then pressing it...blah, blah, blah...I guess I'm just lazy at heart.

I buy the galic pre-peeled. It's in a plastic container by the bags of salad. It's so easy to use.
