Turkey "Waldorf" Salad
Serves 4
2 large Granny Smith apples, cubed 1 cup halved grapes 1/2 cup chopped celery 1 cup cooked turkey, cubed 1/2 cup fat-free ranch salad dressing
In a large bowl, combine all ingredients; stir gently to coat. Serve immediately or cover and refrigerate until serving.
I've made this with leftover chicken breast and it was yummy also.

I haven't started core yet....very confusing for me. I am studying it, though, and hopefully will take the plunge soon.

I make a similar one with tuna and add any crunchy veggies I can find in the fridge. Then serve it over a bed of mixed greens. Very filling.
