Vegetable “Frittata”
2 tsp olive oil pinch of oregano 1 medium potato, peeled and diced 1 medium zucchini, diced ½ bell pepper, finely diced ½ small onion, finely diced 2 cloves garlic, minced salt and pepper, to taste 4 eggs, scrambled 2oz fat free cheddar cheese
Cook the first 8 ingredients in a pan on medium heat until potato is softened. Spray a pie plate with Pam and put vegetable mixture in. Whisk eggs and pour over vegetable mixture, top with cheese. Bake at 350 for 25-30 minutes.
