4 slices of pre packaged polenta (in tube or you can use homemade polenta slices). FF refried beans 1/4 avocado salsa FF cheddar cheese FF sour cream
Coat a nonstick pan with cooking spray and pan fry polenta slices until cooked through and crispy on the edges. Top with a layer of ff refried beans, chopped avocado, salsa and ff cheddar. Melt in the microwave for about a minute on HIGH. Top with FF sour cream.

YUUUUMMMMY!!! This sounds awesome and I'm always looking for great Tex-Mex ideas...one thing I totally miss is my Taqueria down the road with the authentic mexican waiters and the crazy colored booths and the awesomely authentic food!!! argh Why can't all that be core? lol Sorry, ok back from enchilida dreaming.......thanks for this recipe!!! Going to try it now....
