Twice this week I made this, once from leftover chicken and once from leftover baked salmon.
leftover protein - chicken, turkey, fish, or shrimp, chopped ff plain yogurt to moisten salt and pepper to taste chopped onion chopped red pepper shredded carrot curry powder turmeric
Mix all salad ingredients together until well-blended. Stuff into a half an avocado. Serve on a bed of lettuce surrounded by tomato and/or cucumber slices in a fan. Drizzle balsamic vinegar (a few drops) on the lettuce and tomato/cucumber and serve immediately.
Yummy and a very nice presentation.
